This is a whole Acorn Fed Iberico Ham Shoulder which has been sourced from Guijuelo, Spain. The whole leg is a fantastic centrepiece or gift for a friend or loved one. It is a special occasion opening one of the finest hams in the world. The black label Ham Shoulder is produced from a pig that is 100% Iberian pig. This is the best ham shoulder in the world. Its flavours are incredible and are worthy of the Pata Negra title.
The whole shoulder’s average weight is 5 Kg. The finest ones are cured for 24 months and that provides an exquisite and intense flavour as the meat is closer to the bone than in Jamon. A true favourite in Spanish kitchens!

Before you buy
It is important to understand Whole Iberico Hams when purchasing one. Ham shoulders generally yield 40%. That means you might expect to get 1.7 to 2 Kg. of ham slices out of this leg if sliced properly. Everything else is fat and bones. Once your ham arrives, remove all the packaging and keep it at room temperature, it will last for another year! Once open, it will be good for another 45 days or so before it becomes drier. Just cover the surface with cling film when not in use. I hope this helps!
