8-9kg Jamon de Bellota Seleccion Oro “Sin Norma” From Andalucia

from Free Range Iberico Pigs Raised in Dehesas and 100% Natural Curation Process

SELECCIÓN ORO – A DIFFERENT WAY TO ENJOY SPANISH IBÉRICO HAM. For generations, Spain’s finest ham has been enjoyed not only through official classifications, but also through the relationship between producers, specialist buyers and restaurants. The Black Hoof Selección Oro “Caballero” is created for customers who want to experience the character of an acorn-fed Iberico ham while choosing a product that is sold outside the official Iberian quality certification system. This whole ham weighs approximately 8–9kg and is naturally cured for a minimum of 36 months in a traditional natural curing cellar.

FROM THE SPANISH DEHESA. The pigs are raised in selected Spanish dehesa landscapes, with freedom to roam and access to natural pasture, roots and wild fruits. During the montanera season, they are fed naturally with acorns and other resources available in the dehesa. This traditional production environment contributes to the characteristic marbling, aroma and rich flavour associated with Spanish acorn-fed Iberico ham. The result is a ham with abundant intramuscular fat, a delicate texture and a long, balanced finish with subtle nutty and cellar-aged notes.

WHAT DOES “SIN NORMA” MEAN?. Selección Oro is deliberately sold outside the official Iberian ham certification scheme. That means it does not carry an official coloured plastic bridle or certification seal, and it should not be confused with an officially certified “100% Ibérico de Bellota” product. Instead, its quality is based on the producer’s selection, the origin and feeding of the animals, the traditional curing process and direct purchasing relationships.

WHY DO SOME SPANISH CUSTOMERS CHOOSE THIS TYPE OF HAM? In traditional Spanish food culture, particularly in parts of Andalusia, specialist restaurants and experienced buyers have long relied on trusted producers and direct relationships when selecting ham. Where the buyer knows and trusts the producer, an additional certification label may be less important to the purchasing decision. By purchasing directly from the producer and avoiding the costs associated with the official certification process and its associated traceability and labelling requirements, Selección Oro can offer an alternative way to access a premium-style Iberico ham.

THE BLACK HOOF – OUR MISSION TO EDUCATE At The Black Hoof, we believe customers should understand what they are buying. Not every excellent Spanish ham has to be presented in exactly the same way, and a certification label and the sensory quality of a piece of ham are not necessarily the same thing. Our Selección Oro range is part of our mission to introduce our customers to the wider world of Spanish ham — including products that experienced Spanish buyers may choose directly from trusted producers.

A SMARTER WAY TO EXPLORE SPANISH HAM. Selección Oro is not presented as a replacement for an officially certified 100% Ibérico de Bellota ham. It is a different proposition. You are choosing the producer, the raw material and the long curing process rather than paying for an official certification category. For customers who understand Spanish ham — or simply want to discover something different — Selección Oro offers an opportunity to experience a traditionally produced, acorn-fed Iberico ham at a different price point. A genuine taste of the Spanish dehesa, selected for those who value the ham itself.

About the producer

Founded in 1964 in the heart of Sierra Morena, Seville, Jamones Caballero is a family-owned producer with over 60 years of expertise in crafting authentic Spanish Iberian delicacies. Combining traditional curing methods with modern quality controls, every product is carefully monitored from selection to maturation to ensure outstanding flavour, texture and consistency. Made using only carefully selected pork and natural ingredients, with no unnecessary additives, Caballero products reflect a long-standing commitment to quality, authenticity and the rich culinary heritage of Spain.

Before you buy

It is important to understand Whole Iberico Hams when purchasing one. Ham shoulders generally yield 40%. That means you might expect to get approx 1.5 Kg. of ham slices out of this leg if sliced properly. Everything else is fat and bones. Also Iberico Hams are 50% or 75% Iberico breed. Only Black Labels are 100% Iberico breed, also known as Pata Negra. But this is not really an important quality for the final product as what really matters is the lifestyle of the animal, their nutrition and the time of curation. Once your ham arrives, remove all the packaging and keep it at room temperature, it will last for another year! Once open, it will be good for another 45 days or so before it becomes drier. Just cover the surface with cling film when not in use. I hope this helps!
