History & Production of Iberico Ham

Iberian Ham has a long and important history within the Iberian Peninsula of Spain and Portugal. The curing of Jamon Iberico has been recorded as far back as the Romans when ham was a staple part of the local diet. The Jamon Iberico is produced from Black Iberian pigs. These pigs are raised with a special diet and once slaughtered, the Jamon is dried and rested in salt. It is then rested in a Jamon Kiln for up to 2 years to be cured by the elements and natural organisms. That is why sometimes when you receive an Iberico ham, it might be moldy. Don’t worry though, this mold is a key reason why Iberico ham’s taste is so intense and complex.

How to Store your Iberian Ham

Once opened, cover the Iberico Ham leg with a clean cloth so that the open parts are not exposed to the air. This protects the layer on top of the ham. The leg can be stored in your kitchen, or placed in a clean dry place.
