How to Store Iberian Ham Properly: Mould, Preservation and Shelf Life Explained

One of the most common concerns customers used to have was not about taste, but about preservation. How should I store Iberian Ham? Why does it develop mould? Is it safe? How long does it last once opened? These are all very valid questions, and understanding them properly will help you enjoy Iberian Ham at its best, without unnecessary worry.

Why does Iberian Ham have mould?

Iberian Ham is a naturally cured product, matured over many months, often years, in open-air environments. During this process, it is completely normal for natural mould to develop on the outer surface of the ham. This happens due to: Humidity, Air circulation and Temperature changes.

As I used to explain to customers, this mould is not a defect — it is part of the traditional curing process.

Is mould on Iberian Ham safe?

Yes, it is completely safe. The mould that forms on Iberian Ham is natural and harmless, and it only affects the exterior of the piece. Before slicing, the outer layer is either cleaned or removed, so the edible part of the ham remains perfectly safe. In fact, seeing some mould on a whole ham is often a sign that it has been cured naturally and correctly.

What if your Iberian ham arrives with mould? If you receive your Iberian Ham after purchasing it online and notice some mould on the surface, there is no need to worry. This is something that can naturally occur during transport, especially with whole hams that have been cured in traditional conditions. Changes in temperature and humidity during shipping may cause the mould to reappear slightly on the outer layer. This does not mean the product is damaged or unsafe. On the contrary, it is often a sign of a naturally cured, authentic Iberian Ham. There is absolutely no need to return the product.

How to clean mould from Iberian Ham

Cleaning the surface is very simple and takes just a minute. You can:

Use a clean cloth lightly dampened with olive oil or other

Or, if you prefer, rub the surface gently with a small amount of ham fat or butter

Simply wipe the affected area until the surface looks clean again. Avoid using water, as it can affect the preservation of the ham. Once cleaned, the ham is ready to be enjoyed as normal.

How to store Iberian Ham at home

Proper storage is essential to maintain quality. If you have a whole ham, the ideal conditions are: A cool, dry place. Away from direct sunlight. At room temperature (around 15–22°C). Once you start cutting: Cover the exposed area with a slice of its own fat or use a clean cloth. This helps protect the meat from drying out.

If you have sliced Iberian Ham (vacuum-packed): Store it in the fridge (not mandatory but it helps to preserve). Take it out 20–30 minutes before serving.

Does Iberian Ham need refrigeration?

It depends on the format.

  • Whole ham → does NOT need refrigeration
  • Sliced vacuum-packed ham → it helps for it to be refrigerated but it is enjoyed best at room temeprture.

As I used to explain, a whole Iberian Ham behaves more like a cured product than fresh meat.

Shelf life once opened

Another very common question.

  • Whole ham → can last several weeks or even months once opened, if stored correctly
  • Sliced vacuum packs → should be consumed within a few days once opened

Always use your senses: Smell, Texture and Appearance. Iberian Ham is a stable product, but proper handling makes all the difference.
